  4. Deglaze the pan with red wine, scraping up browned bits. Cook for 1 minute until the wine evaporates.
  5. Combine all ingredients in the braising pot, mix thoroughly, and check seasoning.
  6. Bring to a simmer, cover, and cook on low heat for 2 hours, stirring occasionally.
