- Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
- In a bowl, combine cornmeal, flour, baking powder, and salt. Whisk until well blended.
- In another bowl, whisk buttermilk, melted butter, honey, and eggs until smooth, then mix with dry ingredients.
- Fill each greased muffin cup about 2/3 full with the batter.
- Bake in the preheated oven for 12-15 minutes until tops are golden brown and a toothpick comes out clean.
- Cool for 5 minutes, then run a knife around the edges and transfer to a wire rack.
