  • 1/4 cup Chopped Fresh Cilantro optional
  • 1 pcs Jalapeño Pepper deseeded for milder heat
  • 2 cloves Minced Garlic
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder or smoked paprika
  • 1 tsp Smoked Paprika or regular paprika
  • 1 tsp Salt
  • 1/2 tsp Pepper
For the Cheesy Center
  • 1 cup Shredded Cheddar Cheese or Monterey Jack
For the Crunch
  • 1 cup Crushed Tortilla Chips or crushed crackers/potato chips
For Binding
  • 1 pcs Beaten Egg or flax egg for vegan
For Baking
  • 1 tbsp Olive Oil or cooking spray
For Extra Juiciness
  • 15 oz Mexican-Style Tomatoes with Green Chilies or fresh diced tomatoes with chilis

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Finely chop the onion, cilantro, and deseeded jalapeño, then mince the garlic.
  3. In a large mixing bowl, combine the ground beef, chopped onion, cilantro, diced jalapeño, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper.
  4. Fold in the shredded cheddar cheese and crushed tortilla chips into the meat mixture.
  5. Add the beaten egg to the mixture and mix until fully integrated.
  6. Roll the mixture into golf ball-sized portions, roughly 1 to 1.5 inches in diameter.
  7. Lightly grease a baking sheet with olive oil and arrange the formed balls, spacing them at least an inch apart.
  8. Place the baking sheet in the preheated oven and bake for 20-25 minutes until golden brown.
  9. Let them cool for a few minutes and serve warm with dipping sauces.
