- Cook lasagna noodles in salted boiling water for about 8 minutes until tender.
- In a mixing bowl, combine ricotta, ½ cup mozzarella, parmesan, and egg, then add parsley and spinach.
- Spread marinara sauce in the casserole dish, fill each noodle with 2-3 tablespoons of filling, and roll tightly.
- Pour remaining marinara sauce over rolls and sprinkle with reserved mozzarella.
- Cover with foil and bake for 20 minutes; then remove foil and bake an additional 10 minutes.
- Let cool for about 10 minutes before serving.
