Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Cook lasagna noodles in salted boiling water for about 8 minutes until tender.
  3. In a mixing bowl, combine ricotta, ½ cup mozzarella, parmesan, and egg, then add parsley and spinach.
  4. Spread marinara sauce in the casserole dish, fill each noodle with 2-3 tablespoons of filling, and roll tightly.
  5. Pour remaining marinara sauce over rolls and sprinkle with reserved mozzarella.
  6. Cover with foil and bake for 20 minutes; then remove foil and bake an additional 10 minutes.
  7. Let cool for about 10 minutes before serving.
