Method
 

Preparation Steps
  1. In a medium mixing bowl, combine ¼ cup oyster sauce, 2 tablespoons ketchup, 2 tablespoons honey, 1 tablespoon chili garlic sauce, 1 tablespoon Dijon mustard, 2 minced garlic cloves, and 1 tablespoon freshly grated ginger. Whisk until well blended and reserve about ¼ cup of the mixture.
  2. Place 1 pound of chicken in a large Ziploc bag or bowl. Pour marinade over chicken, ensuring well-coated. Seal and refrigerate for 2 to 8 hours.
  3. Remove chicken from refrigerator and drain from marinade. Pre-soak skewers in water for about 30 minutes if using wooden skewers. Thread chicken onto skewers, leaving space, and brush with canola oil. Season with kosher salt and black pepper.
  4. Preheat grill to medium heat, approx. 350°F (175°C).
  5. Place chicken skewers on grill and cook for about 10 minutes, flipping occasionally. Brush with reserved marinade during last 1-2 minutes of grilling.
  6. Remove from grill and let rest for about 5 minutes. Serve garnished with sliced green onions and toasted sesame seeds.
