Ingredients
  

For the Skewers
  • 1 pound Chicken Breasts skinless, boneless
  • 1 cup Pineapple Chunks or substitute with mango or peach
  • 2 cups Bell Peppers any preferred color combination
  • 1 medium Red Onion can substitute with shallots
For the Marinade and Sauce
  • 1/4 cup Low-Sodium Soy Sauce tamari for gluten-free
  • 2 tablespoons Rice Vinegar or use white vinegar
  • 1/4 cup Ketchup or substitute with tomato paste
  • 1/4 cup Brown Sugar can substitute with maple syrup
  • 2 tablespoons Honey or use agave nectar
  • 1 tablespoon Fresh Ginger minced
  • 2 cloves Garlic minced
  • 1 tablespoon Cornstarch or use arrowroot powder
  • 1 tablespoon Sesame Oil or grapeseed oil for high-heat cooking
  • 1/2 teaspoon Red Pepper Flakes optional

Method
 

Step-by-Step Instructions
  1. Pat the chicken breasts dry, cut into cubes, and marinate in soy sauce, salt, and sesame oil for 10 minutes.
  2. Soak skewers for 30 minutes. Thread chicken onto skewers with pineapple, bell peppers, and onion.
  3. Combine remaining soy sauce, rice vinegar, ketchup, brown sugar, honey, ginger, and garlic in a saucepan. Bring to a boil.
  4. Make a cornstarch slurry with water and add to the sauce to thicken for about 2 minutes.
  5. Preheat grill to medium-high heat. Grill skewers for 10-12 minutes, until chicken reaches 165°F.
  6. Remove from heat, drizzle sauce over skewers, garnish with sesame seeds and scallions.
