- Rinse the large shrimp under cold water and pat them dry using a paper towel. Season with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat until hot.
- Add minced garlic and ginger to the skillet, stir constantly for about 1 minute until fragrant.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes until shrimp are pink and opaque.
- Stir in diced fresh pineapple and cook for an additional 1-2 minutes.
- Pour in sweet chili sauce and soy sauce, mixing well and adding red pepper flakes if desired.
- Reduce heat and let the mixture simmer for 2-3 minutes to meld flavors.
- Stir in sliced green onions before serving, adjust seasoning as desired.
- Serve hot over jasmine rice, in tacos, or on its own.
