  • 2 cups Sweet Potatoes firm and fresh
  • 1 can Black Beans rinsed
  • 1 ts Cumin
  • 1 ts Chili Powder
  • 4 large Eggs or scrambled tofu for vegan option
  • 1 medium Avocado diced

  • 4 large Whole Wheat Tortillas warmed
  • 1 cup Mexican/Colby Jack Cheese or plant-based for vegan version
  • 1/2 cup Red Enchilada Sauce

Method
 

Cooking Instructions
  1. Pierce the sweet potatoes with a fork, microwave on high for 6-8 minutes until soft, or roast at 375°F for 45 minutes. Mash and set aside.
  2. Rinse and drain black beans, combine with cumin and chili powder in a bowl, mix well and let sit.
  3. Beat eggs in a bowl, heat skillet with a little oil, pour eggs, stir gently for 3-4 minutes until fluffy, remove from heat.
  4. Warm tortillas on a microwave-safe plate covering with a damp paper towel for 15-20 seconds.
  5. On each tortilla, spread mashed sweet potatoes, add scrambled eggs, spiced black beans, avocado, and cheese. Drizzle with enchilada sauce and roll tightly.
  6. Serve immediately or warm in the oven/microwave. Pair with sour cream or salsa.
