- Heat a large skillet over medium heat and add the canola oil, letting it warm for about 1 minute.
- Crumble the lean ground beef into the skillet and cook for 5-7 minutes until no longer pink.
- Drain excess grease, then add taco seasoning and a small amount of water. Cook for an additional 2-3 minutes.
- In a large salad bowl, combine chopped lettuce, diced tomato, and sweet onion. Mix in hot chili beans and shredded cheddar.
- Add partly crushed Fritos and drizzle the Catalina dressing over the top. Toss until evenly coated.
- Arrange warm taco meat on top and garnish with jalapeños and sour cream if desired.
