Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine the ground beef, quick oats, milk, eggs, and finely chopped onion. Add ½ cup of ketchup, along with salt and pepper to taste. Mix gently until just combined.
  3. Transfer the mixture into your prepared loaf pan, shaping it evenly with a smooth top surface.
  4. In a small bowl, whisk together the remaining ketchup, brown sugar, and yellow mustard until smooth. Spread half of the glaze over the meatloaf.
  5. Bake for 45 minutes, then check the internal temperature. Spread the remaining glaze over the top and bake for an additional 15-20 minutes until it reaches 160°F (71°C).
  6. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.
