Method
 

Step-by-Step Instructions
  1. Heat a tablespoon of vegetable oil in a large skillet over medium heat. Add minced garlic and finely chopped shallots; sauté for about 2–3 minutes until fragrant.
  2. Add 1 pound of ground beef to the skillet, breaking it apart. Cook for 5–7 minutes until browned.
  3. Stir in 2 tablespoons each of soy sauce and oyster sauce, along with 1 tablespoon of brown sugar and a pinch of chili flakes; simmer for 2–3 minutes.
  4. Remove from heat and stir in the juice of half a lime and chopped Thai basil leaves; cool slightly.
  5. Set up a shallow dish of warm water and prepare your rolling station with rice paper wrappers and filling.
  6. Dip each rice paper wrapper in warm water for about 5–10 seconds until pliable. Place on a flat surface.
  7. Position a small amount of the cooled beef filling at the bottom of the rice paper wrapper; include optional herbs and veggies.
  8. Fold the bottom of the rice paper over the filling, tuck in the sides, and roll tightly.
  9. Slice assembled rolls in half diagonally for presentation and serve with your choice of dipping sauce.
