  • 1.5 lbs lean ground beef can substitute with ground turkey
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 2 medium carrots diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 2 cups tomato sauce
  • 1 can (14.5 ounces) diced tomatoes drained
  • 1 cup beef broth
  • 2 tsp Italian seasoning
  • Salt and Pepper to taste
For Cooking
  • 2 tbsp olive oil for sautéing vegetables
For the Topping
  • 1 cup shredded mozzarella or Parmesan cheese freshly shredded melts better
  • ½ cup breadcrumbs optional, for a crunchy topping

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  2. Stir in minced garlic, diced carrots, and diced bell peppers. Cook until tender, about 5-7 minutes.
  3. Push the veggies to the side and add ground beef into the center. Cook for 5-7 minutes until browned. Drain fat if necessary.
  4. Stir in tomato sauce, drained diced tomatoes, and beef broth. Add Italian seasoning, salt, and pepper. Simmer for 10 minutes.
  5. Preheat oven to 375°F (190°C). Pour mixture into a baking dish, top with cheese and breadcrumbs.
  6. Bake for 25-30 minutes until cheese is bubbly and golden brown. Cool for 5-10 minutes before serving.
