  • 1.5 pounds Chicken Thighs boneless skinless
  • 2 tablespoons Vegetable Oil or sesame oil for nutty taste
  • 2 stalks Lemongrass minced
  • 4 cloves Garlic minced
  • 1 small Shallot finely chopped
  • 2 tablespoons Fish Sauce or soy sauce for vegetarian option
  • 2 tablespoons Soy Sauce low-sodium preferred
  • 1 tablespoon Brown Sugar or honey
  • 2 tablespoons Lime Juice fresh
  • 1 teaspoon Ground Black Pepper freshly cracked
  • 1 teaspoon Chili Paste optional
For Garnish
  • 1/4 cup Cilantro for garnishing
  • 2 wedge Lime Wedges or lemon wedges

Method
 

Marinade Preparation
  1. In a large bowl, combine minced lemongrass, garlic, chopped shallot, fish sauce, soy sauce, brown sugar, lime juice, ground black pepper, and chili paste. Mix thoroughly until well blended and sugar has dissolved.
Marinating Chicken
  1. Add chicken thighs to the marinade, ensuring each piece is coated. Cover and marinate at room temperature for 30 minutes.
Cooking Chicken
  1. Heat a large skillet over medium-high heat and add vegetable oil. Allow to heat until shimmering.
  2. Add marinated chicken thighs to the skillet and cook for 5-7 minutes on each side, until golden brown and internal temperature reaches 165°F.
Serving
  1. Transfer chicken to a cutting board and let rest for a few minutes. Slice into strips and serve garnished with cilantro and lime wedges.
