Step-by-Step Instructions for Walking Taco Casserole
  1. Preheat your oven to 350°F (175°C). Prepare a 13x9 inch baking dish by spraying it with nonstick cooking spray.
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Add the finely chopped onions and sauté for 3-4 minutes until softened.
  3. Stir in the taco seasoning and water, bringing to a gentle boil. Reduce heat, add black beans, diced tomatoes with green chiles, and sour cream. Cook for 8-10 minutes until heated through and slightly thickened.
  4. In the greased baking dish, layer Fritos as the base, then a cup of shredded cheese, followed by the beef mixture. Top with the remaining cheese.
  5. Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
  6. Let cool for a few minutes before topping with extra Fritos and your choice of toppings like green onions, sour cream, guacamole, salsa, or jalapeños.
