Marination
- Combine fresh lime juice, orange juice, and optional lemon juice in a bowl.
- Add soy sauce, olive oil, honey, minced garlic, ground cumin, ground coriander, salt, pepper, and zests of lime and orange.
- Whisk until well-blended to create the marinade.
- Place chicken in a resealable bag, pour marinade over, seal, and refrigerate for at least 2 hours, ideally overnight.
Grilling
- Preheat grill to medium-high heat (400°F or 200°C).
- Grease the grates with cooking oil before placing chicken.
- Remove chicken from marinade, discarding the leftover marinade.
- Grill chicken for 6-7 minutes on one side, flip, and grill for another 6-7 minutes.
- Check for doneness using a meat thermometer; internal temperature should reach 165°F (75°C).
Serving
- Let chicken rest for about 5 minutes before serving.
- Top with fresh cilantro and enjoy alongside grilled veggies or your favorite sides.
