Ingredients

  • 1/4 cup Fresh Lime Juice Use fresh for the best taste
  • 1/4 cup Fresh Orange Juice Freshly squeezed is recommended

  • 1/2 teaspoon Black Pepper Can be increased for spicier marinade
  • 1 tablespoon Zest of Lime Freshly zested recommended
  • 1 tablespoon Zest of Orange Freshly zested recommended
  • 1/4 cup Fresh Cilantro Can substitute with parsley

Method
 

Marination
  1. Combine fresh lime juice, orange juice, and optional lemon juice in a bowl.
  2. Add soy sauce, olive oil, honey, minced garlic, ground cumin, ground coriander, salt, pepper, and zests of lime and orange.
  3. Whisk until well-blended to create the marinade.
  4. Place chicken in a resealable bag, pour marinade over, seal, and refrigerate for at least 2 hours, ideally overnight.
Grilling
  1. Preheat grill to medium-high heat (400°F or 200°C).
  2. Grease the grates with cooking oil before placing chicken.
  3. Remove chicken from marinade, discarding the leftover marinade.
  4. Grill chicken for 6-7 minutes on one side, flip, and grill for another 6-7 minutes.
  5. Check for doneness using a meat thermometer; internal temperature should reach 165°F (75°C).
Serving
  1. Let chicken rest for about 5 minutes before serving.
  2. Top with fresh cilantro and enjoy alongside grilled veggies or your favorite sides.
