- In a medium saucepan, bring 2 cups of vegetable or chicken broth to a rolling boil over medium-high heat. This should take about 5–7 minutes.
- Once your broth is boiling, stir in 1 cup of orzo pasta and allow it to boil for 8-10 minutes.
- Reduce the heat to medium and continue cooking the orzo until al dente.
- After cooking, reserve about ½ cup of the broth for later, then drain the orzo in a colander.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 cloves of minced garlic and sauté for about 1-2 minutes.
- Mix in the zest and juice of one lemon with the sautéed garlic and cook for another minute.
